What would I make? I would probably make a game like 'Undertale' but then again, Undertale is really hard to top.

If you're actually going to develop a game, make sure it's worth the effort.
Otherwise, you'll be stuck with a crappy game that you can never make right because the amount of time and effort put into it just isn't enough.

I'm talking about the content of the game and how long it will take you to finish.
Because, trust me, making a game takes a long time.
