Because it'd be awesome to play Super Mario World, Yoshi's Island, Kirby's Dream Land, EarthBound, Super Metroid, Donkey Kong Country, Donkey Kong Country 2: Diddy's Kong Quest, EarthBound Zero, Star Fox, Super Mario Kart, Super Mario 64, Banjo-Kazooie, Killer Instinct Gold, Donkey Kong 64, Super Smash Bros. Melee, and a bunch of other games on your Wii U.

Also, the ability to save any of those games' files to your Wii U's SD card or USB drive, like you can with VC titles.

I have an original GameBoy, GameBoy Color, GameBoy Advance, GameCube, and N64 (not including their accessories) and I still would like one of those adapters.

You can also use the Wii U GamePad as a controller for any game that supports GameCube controllers.

Well, that explains why you wouldn't get one.
The only adapters I really want are the Nintendo 64 and Super Nintendo ones.
