I've watched every episode and I'm really enjoying it. The actors are pretty good, the story is interesting, and it's not just gore.

I don't know.
People just like the show.
It's a good show.
But there isn't much of a zombie plot in it, so if that was what you wanted to see, then it's not for you.

Because it's an amazing show.
The acting is great, the story line is interesting and surprising, and it has lots of drama and action.
You should give it another chance.

If you haven't seen any of the Walking Dead, then you are probably not going to enjoy it.

The first season was mostly about zombies, and there was barely any human interaction. There was also quite a lot of violence, but the seasons got more dramatic as time went on, and less violent.

Well, I wouldn't know because I'm a fanboy and I just watch it, but here are some answers:
The main plot revolves around Rick Grimes and his group of survivors.
They fight to stay alive, and to survive the zombie outbreak.
But that's not all the plot line has; there's also drama, romance, etc.
But if you don't want to watch, then so be it.
