what is the difference between "and" and "&" in a sentence?

And is used to express multiple actions done simultaneously, and & is used to express a state.
So:
The cat ran up the stairs AND jumped out the window.
The cat was hungry AND thirsty
The cat ran up the stairs & ate the rat
The cat was hungry & thirsty

Yes, but I find it more common to use &, unless it's two sentences, which you would normally use "and".
I always have trouble with this.
