I am also a male, and have a penis and testicles. The thing that confuses me is how you can know if someone is a man or woman without seeing them in real life.

The only way to be sure is to ask them outright, but there could be people who are transgenders or just want to keep their gender private. If it's an online friend, this might not matter but I just feel like I don't know enough about some people.

Also, there are some people like my mom (who has never had children) that do not have any secondary sex characteristics of either gender and look more androgynous than anything else. I just never know what to think and I'm always afraid that I might be offending anyone by doing something stupid.

I would assume they'd have a penis if they said they were male. Maybe if they say they're female they can be trusted. Who knows?

You should also get to know people and their true nature before you judge them. You shouldn't expect anyone to lie to you about who they are, though.
