the first thing that popped into my head was "not the heart or kidneys" but then i realized that without kidneys you die because your blood gets dirty, so it's either the heart, lungs, or liver
i'll go with heart

It's not like your organs are replaceable either. They can only remove them when you're in a coma or something so your body can live longer. If you were to lose an organ, that's it, no transplant because they would have to wait for you to die before they could do anything with it.
So I'd go for the brain as well, I'd probably want to keep all my memories and stuff.
