but I don't know how much to spend
I need one with 8GB RAM and at least a GTX1060 GPU, for gaming.
Any recommendations? I'm looking at $700-$1000.

You could get one for $400 if you didn't mind upgrading the graphics card in the future. I'd get 16 GB of ram as it will help your computer run better for longer. You could probably get a decent gaming laptop for around $600.

I don't really need to upgrade the RAM. It'll be fine with 8GB. My current laptop has only 4GB and runs Minecraft perfectly fine.

I highly recommend getting more RAM though. The extra memory is nice to have for general purposes too.

The reason we don't save is most likely because we have a high level of impulsiveness and/or low self-control. I think we both have these traits to some degree. If we try hard enough though, we can improve them. We'll become more patient and disciplined, and less impulsive. We'll also be able to make better decisions. This will help us achieve our goals faster, such as getting a new computer, car, or whatever it may be.
